BAKED OATMEAL

This is an absolutely delicious and somewhat healthy breakfast idea that I decided to make last Sunday, and it ended up lasting me an entire week! It's so simple to make, and then you can put it in separate tupperware containers and just reheat whenever you feel like it. 

First thing is first. Preheat the oven to 375 degrees, and gather all your ingredients together, plus a couple bowls. Next, grease a 2 quart baking dish with butter or some sort of spray.

Mix all the dry things together including the oats, cinnamon, baking powder and salt and stir well (you don't want to be getting a super salty bite!). 

Slice two bananas (you can always do 1 or 3 too depending on how much you like bananas) and layer the bottom of the baking dish with them. Top the banana with half of the blueberries and raspberries.

Combine all the liquid ingredients in a bowl, including almond milk (or regular, whichever you prefer), an egg, melted butter, syrup and vanilla and whisk well.

Pour the dry mixture over the berries as evenly as possible.

Next, pour the liquid mixture over everything and sprinkle the remaining berries on top to finish it off. Stick the dish into the oven for about 30-40 minutes until the top is perfectly brown like below and everything is set.

Voila! Looks delicious, doesn't it?

Such a simple, easy recipe, and nothing better than some warm oatmeal in the morning. I would like to hear of any other ideas for a good baked oatmeal if you've got them!

 

Ingredients

- 1 cup old fashion rolled oats (I used steel cut because it was all I had and it turned out great also)

- 1/2 tsp. baking powder

- 3/4 tsp. ground cinnamon

- pinch of salt

- 1/4 cup of maple syrup

- 1 cup milk (I used almond, I'm sure you could use any type)

- 1 large egg, lightly beaten

- 2 tbsp. butter, melted and cooled slightly

- 1 tsp. vanilla extract

- 2 ripe bananas, peeled and sliced

- 1/2 cup blueberries

- 1/2 cup raspberries (I put in a bit extra of both blueberries and raspberries)
